MINDFUL NUTRITION – BONE-BROTH

One of March's recipes at www.meretheshenon.com/recipes is bone-broth. Replace the soup cube with homemade bone-broth or herbal soup, it is quick, easy, and healthy.

WHY BONE-BROTH

Bone, carcass and fat that we otherwise throw away contain many beneficial vitamins, minerals and other substances that turn into broth along with vegetables, and are easily digestible. Bone-broth contain collagen, proline, glycerin and glutamine, all good for our health. In addition, there are minerals such as calcium, magnesium, phosphorus, silicon, sulfuric acid, which reduce inflammation, support the immune system and help heal allergies and other ailments.

BONE-BROTH IN COOKING

Bone-broth can be used for anything other than soup. Instead of sauteing  onions and garlic first in oliveoil, you can use a little bone-broth and thus avoid the extra fat in the food. Use bone-broth when cooking quinoa or rice, it gives extra flavor to the food. Drink a cup of hot bone broth in the afternoon instead of coffee, it perks up and at the same time makes you full before dinner.

STORAGE OF BONE-BROTH

After boiling, cool down the bone-broth, pour the soup into the portioned container and put them in the freezer. Place a jug of bone-broth in the refrigerator ready for use and thaw a container as needed. Look here for the recipe: www.meretheshenon.com/recipes
